White tea “White peony”

High-quality white tea Pai Mu Tan ( Bai Mu Dan), also known as “White Peony”, is obtained by minimal processing of Camellia sinensis leaves.
As soon as they are harvested, the leaves begin to oxidize. Generally, a low level of oxidation is allowed, to let the taste “mature”. In this case of leaf processing, heat is not used in the form of baking or steaming, drying is used instead. This is why the enzymes in this tea remain active. The production process of this Chinese white tea is actually a controlled drying process. Traditionally, leaves are dried in the sun, while nowadays producers also use special machines that have certain parameters for drying.
How to recognize “White Peony”?
It is characterized by soft silver buds and first and second leaves that remain in their natural form. When we say silver buds, we mean the buds covered with tiny white hairs, which gives this type of tea its name.
The liquid is light yellow and has a particularly aromatic and elegant taste.
It is often described as slightly sweet, with floral notes. While some say its characteristic taste is like ripe fruit, usually pear or quince, mixed with soft, fresh floral notes.
When the impressions are gathered, this is a velvety taste with sweet undertones.
